Ingredients
- 1 medium head of cauliflower, chopped
- 2 chicken breasts, cooked and shredded
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
Start by cutting the chicken into bite-sized pieces and season them with salt and pepper.
In a large pot, heat olive oil over medium heat. Add the chicken and cook until golden brown, stirring occasionally.
Once the chicken is browned, add chopped onions, garlic, carrots, and celery to the pot. Sauté the mixture until the vegetables are soft.
Add chopped cauliflower to the pot, followed by the broth. Stir well to combine all ingredients.
Season the soup with herbs and spices of your choice, such as thyme and bay leaves, and bring the mixture to a simmer.
