  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (optional)
  • 1 can (8 oz) water chestnuts, drained and chopped
  • 2 green onions, thinly sliced
  • 1 head butter lettuce or iceberg lettuce, leaves separated
  • Salt and pepper to taste
  • Optional garnishes: sesame seeds, extra green onions

Instructions

Cook the Chicken:

In a large skillet, heat the olive oil over medium-high heat. Add ground chicken and cook until browned, about 5-7 minutes, breaking it up as it cooks.

Add Aromatics:

Add the diced onion, garlic, and grated ginger to the skillet. Cook until onions are translucent, about 2-3 minutes.

Mix in Sauces:

Stir in hoisin sauce, soy sauce, rice vinegar, and sriracha if using. Mix well and cook for another 2 minutes.

Add Vegetables:

Add chopped water chestnuts and green onions, stirring to combine. Cook for an additional 1-2 minutes until heated through.

Season and Serve:

Season with salt and pepper to taste, and remove from heat. Serve by spooning a few tablespoons of the chicken mixture onto a lettuce leaf. Garnish with sesame seeds and extra green onions if desired. Wrap and enjoy!
