Ingredients

Scale
  • 1 pound of chicken breast, cut into bite-sized pieces
  • 1 cup of bell peppers, assorted colors, cut into bite-sized pieces
  • 1 cup of red onion, cut into chunks
  • 1 zucchini, sliced
  • 1 cup of cherry tomatoes
  • 1/2 cup of barbecue sauce
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Mixed greens for serving
  • Optional: fresh herbs for garnish

Instructions

Step 1: Prepare the Chicken Marinade

In a bowl, whisk together olive oil, barbecue sauce, apple cider vinegar, garlic powder, onion powder, and smoked paprika.

Step 2: Marinate the Chicken

Place the chicken pieces in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes or up to overnight for maximum flavor.

Step 3: Preheat the Grill

Preheat your grill to medium-high heat.

Step 4: Skewering the Chicken

Thread the marinated chicken onto skewers, making sure to leave some space between each piece for even cooking.

Step 5: Grill the Chicken Skewers

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

Step 6: Prepare the Salad

In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and your choice of dressing.

Step 7: Assemble the Salad

Once the chicken is cooked, remove it from the grill and allow it to rest for a couple of minutes before slicing. Place the sliced chicken on top of the salad mixture and serve.

Step 8: Serve and Enjoy

Enjoy your BBQ chicken skewer salad fresh with additional dressing on the side, if desired.

Notes

Note 1: Choosing the Chicken

You can use boneless chicken thighs or breasts for this recipe; both work well.

Note 2: Marinade Variations

Feel free to customize the marinade by adding your favorite herbs or spices to suit your taste.

Note 3: Vegetable Options

You can add other vegetables to your salad such as bell peppers, avocado, or corn for extra flavor and color.
