Ingredients
- 1 pound of chicken breast, cut into bite-sized pieces

- 1 cup of red onion, cut into chunks
- 1 zucchini, sliced
- 1 cup of cherry tomatoes
- 1/2 cup of barbecue sauce
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- Mixed greens for serving
- Optional: fresh herbs for garnish
Instructions
In a bowl, whisk together olive oil, barbecue sauce, apple cider vinegar, garlic powder, onion powder, and smoked paprika.
Place the chicken pieces in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes or up to overnight for maximum flavor.
Preheat your grill to medium-high heat.
Thread the marinated chicken onto skewers, making sure to leave some space between each piece for even cooking.
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and your choice of dressing.
