  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish

Instructions

Step 1: Prepare the Potatoes

Wash and peel the potatoes. Dice them into small cubes to ensure they cook evenly and quickly.

Step 2: Cook the Bacon

In a large pot, cook the bacon over medium heat until it is crispy. Remove the bacon from the pot and set it aside, leaving the rendered fat in the pot.

Step 3: Sauté the Vegetables

Add chopped onions, garlic, and bell peppers to the pot with the bacon fat. Sauté the vegetables until they are softened and fragrant, about 4–5 minutes.

Step 4: Add the Potatoes and Broth

Stir in the diced potatoes and pour in the broth. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are fork-tender, about 15–20 minutes.

Step 5: Blend the Soup

Once the potatoes are cooked, use an immersion blender to puree the soup to a desired consistency. If you prefer a chunkier texture, blend only half of the mixture.

Step 6: Incorporate Cream and Seasoning

Stir in heavy cream, Cajun seasoning, and salt to taste. Allow the soup to heat through for another 5 minutes.

Step 7: Serve the Soup

Serve the soup hot, garnishing it with the reserved crispy bacon, chopped green onions, and additional Cajun seasoning if desired.

For the best texture in your soup, choose starchy potatoes like Russets or Yukon Golds, as they will break down beautifully when cooked.
