Instructions

Step 1: Prepare the Nougat Layer

In a saucepan over medium heat, mix 1 cup granulated sugar, 1 cup light corn syrup, 1/4 cup water, and a pinch of salt. Stir until the sugar is completely dissolved.

Step 2: Cook the Nougat Mixture

Bring the mixture to a boil, without stirring, until it reaches 240°F. Carefully remove from heat and immediately add 1/2 cup heavy cream and 1/4 cup unsalted butter, cubed. Stir gently until everything is combined.

Step 3: Add Flavors to the Nougat

Next, add 1 teaspoon vanilla extract and 2 cups marshmallow creme to the mixture. Stir until smooth and uniform.

Step 4: Incorporate the Pecans

Stir in 3 cups chopped pecans. Then, spread the nougat mixture onto a lined baking sheet to cool and firm up.

Step 5: Make the Caramel Layer

For the caramel, combine 1 1/2 cups granulated sugar, 1 1/2 cups light corn syrup, 1 cup heavy cream, and 1 cup unsalted butter, cubed in a saucepan. Heat over medium, stirring until the mixture is smooth and the sugar is dissolved.

Once smooth, increase the heat and allow the mixture to reach 245°F without stirring. Remove from heat and stir in 1 teaspoon vanilla extract.
