Description

There’s something incredibly comforting about a warm bowl of soup, especially on a chilly day. If you’re longing for a cozy meal that offers the flavors of a classic cheeseburger without the ground beef, this creamy Cheeseburger Soup made with ground turkey will satisfy your cravings. Creamy, rich, and filled with nutritious veggies, every spoonful of this delightful dish will transport you straight into comfort food heaven.

Ingredients

Scale
  • 1 lb ground turkey
  • 3/4 cup onions, diced
  • 3/4 cup carrots, shredded
  • 3/4 cup celery, diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley flakes
  • 4 tablespoons butter, divided
  • 3 cups chicken broth
  • 4 cups potatoes, peeled and diced
  • 1/4 cup all-purpose flour
  • 16 ounces Velveeta cheese, cubed
  • 1 1/2 cups milk
  • Salt and pepper to taste
  • 1/4 cup sour cream

Instructions

Step 1: Brown the Turkey

In a large pot, brown the ground turkey over medium heat. Once cooked, drain any excess fat and set aside.

Step 2: Sauté the Vegetables

In the same pot, melt 1 tablespoon of butter. Add the diced onions, shredded carrots, diced celery, dried basil, and parsley flakes. Sauté until the vegetables are tender.

Step 3: Combine Broth and Potatoes

Stir in the chicken broth, diced potatoes, and the browned turkey. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender.

Step 4: Make the Roux

In a small skillet, melt the remaining 3 tablespoons of butter. Add the all-purpose flour and cook until it becomes bubbly. Gradually stir this roux into the soup, blending well to ensure a smooth texture.

Step 5: Add the Cheese

Add the cubed Velveeta cheese to the soup. Stir continuously until the cheese is completely melted and well incorporated.

Step 6: Incorporate the Milk

Stir in the milk and heat the soup through, being careful not to let it boil.

Step 7: Finish with Sour Cream

Remove the soup from heat and blend in the sour cream. Add salt and pepper to taste, adjusting as needed.

Notes

Storage

This soup can be stored in an airtight container in the refrigerator for up to three days.

Freezing

For longer storage, consider freezing the soup. Allow it to cool completely before transferring to freezer-safe containers. It can be frozen for up to three months. Reheat on the stovetop when ready to enjoy.

Variations

Feel free to add additional vegetables like bell peppers or corn for added flavor and nutrition. You can also swap Velveeta cheese for a different cheese of your choice, but this may change the creaminess of the soup.

Serving Suggestions

Serve the soup with crusty bread or a side salad for a complete meal that everyone will enjoy.
