Ingredients
- 1 cup mashed ripe bananas (about 2 medium bananas)
- 1/3 cup coconut oil, melted
- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 cup chocolate chips
- 1/4 tsp salt
Instructions
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper to prevent the cookies from sticking.
In a mixing bowl, mash the ripe bananas until smooth. This will be the base for your cookies.
Add the almond butter and maple syrup to the mashed bananas. Stir until fully combined.
In a separate bowl, mix together the oats, flour, baking soda, and salt.
Gradually add the dry mixture to the wet ingredients, stirring until a dough forms.
Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.
Using a spoon or cookie scoop, drop dollops of dough onto the prepared baking sheet, spacing them apart.
Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are golden brown.
Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Note 1: Store Cookies Properly
Store the cookies in an airtight container at room temperature for up to a week, or in the fridge for longer freshness.
Note 2: Make Ahead and Freeze
These cookies can be frozen before or after baking. If freezing before baking, scoop the dough onto the sheet and freeze; once solid, transfer to a bag and store. Bake from frozen as needed.
