Ingredients

Scale

For the Chocolate Cake Layer:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup hot water

For the Chocolate Mousse Layer:

  • 1 1/2 cups semisweet or dark chocolate (chopped)
  • 2 cups heavy cream (cold)
  • 1/4 cup powdered sugar

For the Chocolate Ganache Topping:

  • 1/2 cup heavy cream
  • 1/2 cup semisweet or dark chocolate (chopped)

Instructions

Make the Chocolate Cake

Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In another bowl, combine the sugar, vegetable oil, eggs, and vanilla extract until smooth. Add the sour cream and stir until combined. Gradually add the dry ingredients to the wet ingredients, alternating with the hot water, and mix until smooth. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.

Make the Chocolate Mousse

In a microwave-safe bowl, melt the chopped chocolate in 30-second intervals, stirring in between until smooth. Let the melted chocolate cool slightly. In a separate bowl, whip the cold heavy cream and powdered sugar until stiff peaks form. Gently fold the cooled melted chocolate into the whipped cream until fully combined and fluffy. Spread the mousse evenly over the cooled cake layer. Refrigerate for at least 1 hour to set.

Make the Ganache Topping

In a small saucepan, heat the heavy cream until simmering. Remove from the heat and pour over the chopped chocolate. Let it sit for 1 minute, then stir until smooth. Let the ganache cool slightly before pouring it over the mousse layer, spreading it evenly. Chill the cake for an additional 1-2 hours before serving.

Notes

Choosing the Right Chocolate

Opt for a high-quality semisweet or dark chocolate to enhance the flavor of your mousse cake. The quality of chocolate can significantly impact the taste of the dessert. Using chocolate bars instead of chocolate chips can provide a smoother texture in the ganache and mousse layers, ensuring a luxurious and premium result. It’s worth investing in good chocolate to truly savor this decadent dessert at its best.

Whipping the Cream

When whipping the heavy cream for the mousse, ensure that both your cream and mixing bowl are very cold. A cold environment helps the cream to whip more effectively, achieving stable and fluffy peaks. This step is crucial, as it provides the right texture and volume for the mousse, helping it hold up between the layers in the cake without becoming too dense or collapsing.

Preparing the Cake in Advance

Consider making the components of this cake in stages if you’re short on time. The cake layer can be baked and stored at room temperature for up to two days, while the mousse and ganache can be prepared the day before and stored in the refrigerator. This makes assembly easier and less time-consuming on the day you intend to serve the cake, allowing you to focus on presentation and final touches.

Ganache Versatility

The ganache topping is not only a glaze but can also double as a filling or frosting for other chocolate desserts. If you have leftovers, consider drizzling it over ice cream or using it as a dip for fresh fruits. The ganache adds an elegant touch of flavor and is a versatile component that complements various other dishes and desserts you might explore.

Serving Suggestions and Storage

For best presentation and taste, allow the cake to sit at room temperature for about 15 minutes before serving. This allows the ganache to soften slightly for a more pleasing texture. Store remaining cake in an airtight container in the refrigerator for up to five days. The cake can also be frozen, wrapped tightly in plastic wrap and foil, for up to two months. Thaw in the refrigerator overnight before serving.
