Ingredients
- For the Pancakes:
- 2 large eggs
- ½ cup granulated sugar
- 1 tablespoon honey

Instructions
Step 1:

Sift the flour and baking powder into the mixture, stirring until combined. If needed, add a splash of water to get the perfect batter consistency.
Step 3:
Heat a non-stick skillet over medium-low and lightly oil the surface. Pour about 2 tablespoons of our batter onto the skillet, forming mini pancakes.
Step 4:
Cook until bubbles form on the surface and the edges set, then flip and cook the other side till golden brown. Repeat until all the batter’s gone.
Step 5:
Once cooled, sandwich a generous spoonful of anko between two pancakes for the ultimate sweet delight.
