  • For the Cake:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 ripe bananas, mashed
  • 1/2 cup chopped walnuts
  • 1/2 cup white chocolate chips
  • For the Filling and Topping:
  • 2 cups creamy custard
  • 1 banana, sliced (for garnish)
  • 1/4 cup whole or halved walnuts (for garnish)

Instructions

Prep the Pans

Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

Mix Dry Ingredients

In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

Cream the Butter & Sugar

In a large bowl, beat the softened butter and granulated sugar until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Wet Ingredients

Mix in the sour cream and mashed bananas until the mixture is smooth.

Unite Dry & Wet

Slowly add the dry mixture to the wet ingredients. Stir until just combined. Fold in the chopped walnuts and white chocolate chips.

Divide & Conquer

Pour the batter evenly into the prepared cake pans.

Bake to Perfection

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool Down

Let the cakes cool in their pans for 10 minutes, then transfer them to a wire rack to cool completely.

Layer with Love

On one cake layer, spread half of the creamy custard. Place the second layer on top and spread the remaining custard over it.

Garnish & Serve

Adorn the cake with banana slices and walnuts. Serve immediately or chill until ready to serve.

Notes

Banana Ripeness

Ensure bananas are very ripe for optimal sweetness and flavor in the cake.

Walnut Substitution

Feel free to substitute walnuts with pecans or omit them for a nut-free version.

Storage Instructions

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Serving Suggestions

Pair with whipped cream or vanilla ice cream for an elevated dessert experience.
