  • 2 lbs ground pork
  • 1 lb ground beef
  • 1 cup shredded pepper jack cheese
  • 2 jalapeños, seeded and diced
  • ¼ cup cold water
  • 2 tbsp curing salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp ground black pepper
  • ½ tsp cayenne pepper
  • ½ tsp liquid smoke

Instructions

Mix It Up

In a big ol’ bowl, mix ground pork, beef, pepper jack cheese, jalapeños, and all those spices. Stir until everything’s best buds.

Chill Out

Wrap it up with plastic wrap, pop it in the fridge, and let the flavors hang out for 24 hours.

Preheat & Prep

Set your oven to 325°F (165°C). Shape your mix into logs, about 1.5 to 2 inches thick, on a parchment-lined baking sheet.

Bake Time

Slide those logs into the oven and let them bake for 1.5 to 2 hours until the internal temperature says 160°F (71°C). Cool and slice!
