Looking for a delicious and healthy alternative to traditional meatballs? These meatless lentil meatballs are packed with flavor and nutrients, making them a great option for those looking to reduce their meat consumption. Easy to prepare and satisfying, they can be enjoyed in various ways, whether served with pasta, in a sub, or alongside your favorite dipping sauce.

Ingredients

Scale
  • 1 cup cooked lentils
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 egg or flax egg (for vegan option)

Instructions

Step 1: Cook the Lentils

Cook the lentils according to package instructions until they are tender but still firm. Drain and let them cool.

Step 2: Prepare the Mixture

In a large mixing bowl, combine cooked lentils, breadcrumbs, grated carrots, chopped onion, garlic, spices, and herbs. Mix well until all ingredients are evenly combined.

Step 3: Form the Meatballs

Using your hands, form the lentil mixture into small balls, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.

Step 4: Bake the Meatballs

Preheat the oven to 375°F (190°C) and bake the meatballs for 25-30 minutes, or until they are golden brown and firm to the touch.

Step 5: Serve

Let the meatballs cool slightly before serving. They can be enjoyed with marinara sauce, in a sub, or on a bed of pasta.

Notes

Cooking Lentils

Cooking lentils properly is essential to achieving the right texture for your meatballs. Rinse lentils under cold water before cooking to remove any impurities, then simmer them in vegetable broth or water until tender.

Mashing Ingredients

After cooking, take the lentils and mash them with a fork or a potato masher. This allows for a more cohesive mixture that will hold together when formed into balls.

Binding the Mixture

Use ingredients like breadcrumbs or crackers to bind the mixture together. This will help the meatballs maintain their shape during cooking.

Flavor Building

Enhance the flavor profile of your meatballs by incorporating finely chopped onions, garlic, and spices such as cumin or paprika into the mixture.

Baking or Pan-Frying

You can either bake the meatballs in the oven for a healthier option or pan-fry them in a skillet with a bit of oil for a crispy texture.
