- 1 loaf cornbread, crumbled
- 1 onion, chopped
- 1 celery stalk, chopped
- 1/2 cup butter, melted
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 2 eggs, beaten
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine cornbread crumbs, onion, celery, butter, parsley, thyme, and pepper.
- Gradually stir in chicken broth until moistened.
- Beat in eggs.
- Pour mixture into a greased 9×13 inch baking dish.
- Bake for 30-35 minutes, or until golden brown and set.
Notes
- For a richer flavor, use homemade cornbread.
- You can add other vegetables like mushrooms or bell peppers.
- If you don’t have chicken broth, you can use vegetable broth or water.
