Instructions

Preheat the Oven

Preheat your oven to 350°F (175°C) and line a 10×15 inch jelly roll pan with parchment paper.

Prepare the Shortcake Batter

In a bowl, whisk together 1 cup of all-purpose flour, 1/2 cup of granulated sugar, 1.5 tsp of baking powder, and 1/4 tsp of salt. Stir in 3/4 cup of milk, 2 tbsp of melted unsalted butter, and 1 tsp of vanilla extract until smooth. Pour the mixture into the prepared pan and spread it evenly.

Bake the Shortcake

Bake for 12-15 minutes until the top springs back when lightly touched. Once baked, invert the cake onto a sugar-dusted towel and peel away the parchment. Roll the cake up in the towel from the short end and let it cool.

Make the Cheesecake Filling

For the cheesecake filling, beat 8 oz of softened cream cheese until fluffy. Add 3/4 cup of powdered sugar and 1 tsp of vanilla extract, continuing to beat until smooth. Fold in 1/2 cup of whipped topping and set aside.

Prepare the Strawberry Filling
