Ingredients

Scale

For the Crust:

  • 1 and 1/2 cups crushed chocolate cookies
  • 1/4 cup melted butter

For the Filling:

  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup dark unsweetened cocoa powder
  • 3 large eggs
  • 1 cup semisweet chocolate chips, melted
  • 1 teaspoon vanilla extract

For the Ganache Topping:

  • 1 cup heavy cream
  • 1 cup semisweet chocolate chips

Instructions

Step 1: Prepare the Oven and Pan

Preheat your oven to 325°F (165°C) and get your springform pan ready for action by greasing it lightly.

Step 2: Make the Crust

Mix the crushed chocolate cookies with melted butter and press the mixture into the bottom of the pan. Set it aside to chill.

Step 3: Prepare the Filling

Beat cream cheese until smooth, then add sugar and cocoa powder, mixing until well combined.

Step 4: Incorporate the Eggs and Chocolate

Add in the eggs, one at a time, beating on low speed. Stir in the melted chocolate and vanilla. Pour the mixture over your crust.

Step 5: Bake the Cheesecake

Bake for about 55 minutes or until the edges are set and the center is slightly jiggly. Allow it to cool completely.

Step 6: Create the Ganache

Heat the heavy cream until it just begins to simmer, then pour over the chocolate chips. Stir until a smooth ganache forms.

Step 7: Add the Ganache Topping

Pour the ganache over the cooled cheesecake, spreading it evenly. Chill until the topping is set, slice, and devour!

Notes

Tip for a smoother filling

Make sure the cream cheese is at room temperature before beating it to avoid lumps in the mixture.

Adjusting sweetness

You can alter the sugar content based on your taste preference if you like a less sweet dessert.

Storage instructions

Store the cheesecake in the refrigerator for up to 5 days. It can also be frozen for up to 2 months.
