Ingredients
- 1 lb beef stew meat, cubed
- 2 tablespoons olive oil
- 1 cup chopped onion
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, sliced
- 1 cup green beans, trimmed and cut
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 bay leaf
- Some fresh parsley for garnish
Instructions
In a large pot over medium-high heat, add the beef and cook until browned. Make sure to stir occasionally for even cooking.
Once the beef is browned, add diced onions, carrots, and celery. Cook for about 5 minutes until the onions are translucent.
Add in beef broth and water to the pot, bringing the mixture to a boil.
Stir in the seasonings including garlic, bay leaves, Worcestershire sauce, salt, and pepper to the boiling mixture.
Add potatoes, green beans, corn, and diced tomatoes to the pot. Stir well to combine all ingredients.
Reduce the heat to low and let the soup simmer for 1 to 2 hours, stirring occasionally.
Before serving, remove the bay leaves from the soup.
Serve the vegetable beef soup hot, garnished with fresh herbs if desired.
